Chris, I used a set of Oxford humpback panniers and tank bag last year. I have another tailpack but didnt need it.
It fits really well if you take a bit of time to get everything adjusted right and it holds everything you will need and more.
If you do need more, they are expandable aswell.
I used a Renteck rack aswell to carry my tent and roll mat but I reckon you don't need one if you are not carrying a pillion.
