Mike, depending on how long you've got you could do a number of routes.
Assuming you're coming across the channel I'd head south passed Brussels on the motorways, get off at Namur, head to Dinant (nice castle on the hill), and then across the Ardennes (lots of wiggly routes available), some nice towns to stop at, La Roche en Ardenne. I'd then aim to join up with the B258 in Germany around Monscahu then head to the Nurburgring area. This would be a long single day, and would be better over 1.5-2 days if you want to stop and visit places along the way. If you want to get to the Ring in one 4 hour push I'd motorway to just passed Liege, turn off at Eupen, then head for Monschaua and B258 it to Nurburg.
Once at the 'Ring there's always the option of doing a day trip down to Cochem, a nice town on the river Mosel, in the Mosel valley.

For local accomodation to the ring try sliders (20 mins away ~ 32 euro B&B) or the Burgstube (2-5mins away, a bit more but not too expensive).
