You don't need a brake light to get an MOT, if one is fitted it must work but you don't have to have one:

The entire brake light test in inapplicable to a race bike with no lights on it, you will get an advisory stating not to ride in anything other than daylight, and also not to ride in conditions with seriously reduced visibility, so no fog etc
Don't fit any lights to the bike and it'll be fine, you DO need a legal sized number plate and prism type reflector, not a sticker
Obviously the wisdom of riding a bike with no brake light on the road is another thing entirely, I've almost collected a couple of the supermoto guys who don't fit one going into corners...
