Reasons;
The bolt wasn't strong enough to undo itself, an EZ out is much smaller, brittle due to it's hardness and has threads which propagate into cracks.
The EZ out is a taper, which is screwing itself into the bolt as you use it, meaning the harder you twist, the harder it goes in, expanding the bolt which will lock it into the hole harder.


Just my opinion, but I have snapped a few and had to oxy torch them out (bloody difficult with an ally part you don't want to melt).
