Few days late, but heres my input ;p.

I change gear at around 8k rpm since the restrictor drops the power off at 8,500.

Also I think that's normal with the temp, mine does it all the time. I expect it's were you're doing different speeds, going into a cooler part of the road e.g under tree's.
