I lived in Plymouth for several years and for me the best fun was running around Swilly or Devonport after dark and trying not to get murdered!
Cap'n Jaspers is a fun place with nice food and when you get your bag of chips, have a wander around the Barbican area, some of the historic information there will move you to tears, especially with the bravery of some of the sailors who left from there.
There is an old market hidden away in the back streets of the Barbican that has genuine Nazi uniforms and costumes from Dr Who or sale!
Plymouth Museum is generally uninteresting, if you are really bored, this is an easy way to waste an hour or two looking for the well hidden, good bits.
Dartmoor is Fantastically beautiful, well worth a visit are Dewerstone, Great Mis Tor and the water falls out by Postbridge. The walking around there is lovely and on top of Dewerstone you can see miles of coast from Devon and Cornwall and the Moors behind you.
If you quite like pub stuff, check out the clubs on North Hill, I used to drink in the skiving Scholar or my favourite pub, The Swallow.

Good luck, be careful in Plymouth. In the words of Obi Wan,
