LAser detector don't pick up the beam, they pick up the defracted light caused by dust etc. Because the laser has a very specific and unusual wavelength it is possible to assume that if you detect the smalllest amount of light of that wavelength then it must be of an unnatural source. (Basically the same way a radar detector works)
