IMO it depends where it was stolen from.... if it was private property, then you should be covered - as you can insure a bike, even if it's not roadworthy.
If it was on the road, in an unroadworthy condition, then it shouldn't really have been there, and they might try and wriggle out of it.
Either way, you are, hypothetically, in a tricky situation. Read the small print of your policy, and check the law concerning MOT's.
