Lots do two up on an SV a long way. Will be fine, pack light, but no other option really. I'm assuming the 26 stones is the both of you, apologies if not

When I binned my bike last time I went two up on my bro's sv-was uncomfortable for both of us and I would never like to do it again unless in an emergency-mind you was probably combined weight of 30 stone-yep we make them big in scotland

OXford soft luggage seems to be that of choice, panniers seem ok, Ive seen people with it two up.

I'd go for soft panniers, tankbag and if that's not enough something soft light (clothes/sleeping bag) in a smallish rucksac on the pillion's back. Even with a pillion, you can still lash a camping bed/small tent onto the grad rail, provided they're prepared to hold onto you rather than it.

If they wear a rucsac, do make sure it's light and tell them to lean forwards. One of my mates was leaning back with a lot of stuff in his 85 litre rucsac and the bike was wheelieing involuntarily away from the lights.
