Default todays magic formulae

Appears to be :-

4oz Plain flour
pinch of salt

sifted into a bowl , make a dip in the flour/salt into which you add two eggs.

mix together 7oz of milk with 3oz water.

stir flour/egg mix gradually adding the milk/flour and then whisk till all lumps removed and allow to stand for at least 30 minutes.

gather your kids

put a little veg oil in frying pan and get nice and hot, add enough of the above batter to thinly cover the base of the pan. cook till golden on bottom. of course you cannot see this so gently pry around the edges trying not to tear.

When happy it is cooked toss (No Hovis the pancake out of the pan). Did I not tell you you need to then catch it cooked side up in the pan.

Right scrape it off the floor or ceiling and tell the kids that was a practice and start again.

This time when you have caught it cook till the other side is golden as well.

Put it on a plate, and give the kids plenty of sweet stuff to spread on it and keep the dentist employed. Mine usually go for sugar and lemon.

Maple syrup is lovely though

Enjoy shrove (pancake) tuesday

I do flour/eggs/milk/water/pinch of salt. I never measure anything. Just bung it in till it looks about right. Always works for me. Same thing for yorkshires.

did I say yorkshire?

Couple of mods to that recipe.

Mix the flour with the eggs before adding the flour/water - it makes the eggs blend into the mix better.

Use BUTTER (clarified if you can) in the pan, or if you have non-stick, dont use anything.

I prefer using olive oil. It's more healthy and it doesn't taste much different.
I think i'll be leaving college now to fill up on some pancakes at home.

Olive oil is useless to fry in - it doesn't handle the heat properly.

Someone once figured that if you did the right amount of exercise, ate the right things and got enough sleep you could live to be 120.

Thing is it would be SO boring you would commit suicide by 40............

Live a little, break out the butter
