Suspension needs to work freely without interference over it's full travel regardless. Try drop forks a bit, you might like it better. Lowered bikes handle horribly.

Well either further back or at a different angle so the plate isn't pointing at the tyre.
Personally the thought of my tyre getting chomped when landing off a crest or something at a hundred and daft miles an hour scares me. The thought of buying a new plate every time you jump it over a speed bump even more so!!
