I eat at least two eggs every day, when i was into weights a bit more i used to drink raw egg white and eat about 8 eggs a day.
The closest you can get to natural steriods. Plus there nice. |

I do mine on a low heat and about 3mm of oil in the frying pan. Warm the oil, don't boil it and crack the eggs in then leave them to settle for a minute. If the oil is too hot it bubbles the whites, if it's just right they just cook without getting crispy edges. When they are white all the way underneath start to slide the slice under to move them about the pan and then gently splash hot oil on the top. A minute or so of this and the whole of the white will be cooked and the yolk will be hot.
It worked about 10 mins ago when I made sausage and egg sarnies. |

Can't believe no one has actually given the perfect way yet!? (from a search I haven't read all the pages).
Just fry them as normal in a frying pan with a little bit of oil but as soon as you crack the egg into the pan cover it with a lid (from one of your saucepans that is the same size). The steam that builds up inside cooks the runny egg white on top in a very short time, remember to check it to make sure you don't start cooking the yoke. I guarantee you this makes you a perfect fried egg |

Yeh but not too runny, i see how some of those TV chefs make theirs and its just half cooked surely. My flatmate always had frieed eggs with his brekkie until he tried my scrambled. Now he's either really lazy or loves mine cos he aint made a fried egg since!

Slightly off topic, but the best way I know to do scrambled eggs that are really creamy is also the simplest way as in all you need is salt and pepper.
Break eggs into a bowl, beat really well, add a little salt and pepper. Have a bowl sitting over boiling water (water should not touch bottom of bowl) and put eggs into bowl. Use a spatula to keep the eggs moving and it takes longer than normal scrambling, but you'll end up with the creamiest eggs ever. It's tea time, but I think I may go and make some. Whatever you do though, don't overcook them. Should look to be just done and creamy when you take them off the heat. As for fried egg, as others have said, you need a tablespoon of oil per egg in a pan, leave the pan and oil to get really hot and smoking, thencrack your eggs in. Let them sit for a minute, then use a spatula to get some of the hot oil on the top of the whites. As soon as the whites are cooked, straight out of the pan to get the yolk away from the heat and eat away! EDIT: Also depend on what you cook with. I have electric ceramic plates and they don't get to the same heat as quickly as gas. So...if you use gas, just cut the heat a little. You don't want the egg to be in there too long as the yolk will cook through, but you don't want to overcook the white before the yolk is hot through. Just a little more trial and error methinks. I agree that putting a lid on helps to get the white cooked quickly, but it just depends on whether or not you like the egg done that way. Personally, I'm with Bananaman........scrambled all the way! Yes it is.....made Stretchie his first one last week with bacon, roughly chopped wood garlic leaves and seasoning.....he loved it and it was gone in no time!
