RECIPE:
1 1/2 cups ( 215 grams) plain white flour 1 1/3 cups ( 275mls ) milk (semi or whole doesn't matter but not skimmed) 1 tbsp baking powder 1 tbsp caster sugar 1 tsp salt 2 tbsp melted butter 1 large egg METHOD: Preheat bakestone if you have one or a large thick bottomed frying pan on moderate to high heat (i.e. 70% of the max setting of your cooker) and season with oil, just a tiny bit, not so it's sitting in the pan. Throw all the above ingredients into a large mixing bowl and save any leftover melted butter to keep seasoning the pan between batches. Whisk the hell out of the batter for 1-2 minutes until it is smooth and thick. It should be such a consistencly that when you lift the whisk out of the batter, it falls off the whisk smoothly, but creates a little mound on top of the batter below before levelling out. You don't need to let it rest or cool. Using a ladel, pour about a third ladel full of the batter onto the seasoned bakestone (or pan) and depending on the size of bakestone/pan, you can do batches of two or three at a time. You need to leave a good gap between them to allow for them spreading a little when you first pour them. If they spread too much and become more than about 4 inches across, just add a little more flour to the mix, whisk in and carry on...no harm! After about a minute, you'll see bubbles appear on the top of the pancakes, but will see that they are still runny. As soon as the runny look has gone and they look more matt than shiney, turn them over. They'll take a minute or two on the other side, but check the bottom if you're not sure. That's it...SIMPLES! Drench in maple syrup and have with whatever you like! Oh....and for any Celiacs out there, I have made these for a friend that is a celiac, using gluten free flour and they were no different AT ALL! Sounds very similar to the recipe we use from the Nigella book. Had them this morning with maple syrup nom nom nom
Used to use Jamies recipe but it was such a faff, separate eggs, whisk the whites etc etc Lu, my OH, makes the flour mix up as a big batch so its a set measure of that to one egg, bit of milk and melted butter, really yummy Last edited by 7755matt; 20-09-09 at 08:36 PM. Reason: spellung |
