I took this to mean the spindle spacers that go on the spindle between the fork legs and the wheel bearings because having them the wrong way around (left to right) would offset the wheel and cause it to rub. I don't have a standard front end on mine so can't check but from memory I didn't think the SV has them, doesn't it just have the speedo drive on the left side and a pinch bolt on the bottom of the right leg?

The only solutions I can offer is that either the spindle bolt isn't tight which is allowing the wheel to move to the right, you haven't seated the speedo drive properly which will be holding the wheel away from the left fork leg, or as Bibio suggested you didn't bounce the front before tightening the pinch bolt (after you tightened the spindle) but if that is the case it would only be rubbing on the right side.

I don't think you could physically get that wrong on the stock SV.

I'd say bent fork or stressed assembly meaning the axle was in the wrong place on the pinch bolt.

Its hard to tell from those pictures can you take some from a little further away so we can see the spindle, spacers and speedo drive.

Sorry for the late update been busy with work.
Its been sat for a while but before that i changed the fork oil, it was put back and it seemed fine, then it sat for a while then I changed out the brake pads / removed the front wheel due to speedo not working so checked and replaced the rotor (still isn't working so going to swap out the sensor) put everything back together and since then, is when ive noticed the problem with the caliper hanger rubbing along the disc.
I decided to remove the forks again and spin the stanchion a bit which has moved the caliper mount away from the disc so its no longer grinding. So I'm guessing the forks must be bent.
