Seeing as you had all that trouble getting the caliper apart just recently, I would think it likely that the pins on which the caliper slides side to side are stuck, the brake will pump up fine - you've got several hundred psi in the hydraulic system to do this - but it's not necessary to have much drag in the pins for it to be difficult for the brake to release itself.
