Not sure how the plan is going with regards to meeting others. We'd quite like to keep it quiet for the most part, possibly hooking up with people every three days.

Most I've done was about 400 in a day (yes that was visiting Baph's neck of the woods). Spaced out and with breaks it wasn't a problem at all. So I'd seconds Baph in saying a 440 mile day is ok, but be realistic. I'm very impatient and don't like stopping, but actually the stops kinda make the ride better, even worthwhile, find some way to enjoy them (for me that means eating) and you'll be fine.
I like your thinking and if you do accept taggers on for bits then I'd be interested in meeting up for part of a leg (though I don't think you go anywhere near me - might have to meet you at Baphs... shame) EDIT: Just looked at the route - that's awesome, great idea. There's a google map somewhere were a number of peeps (me included) have put pins in at or near our home locations. That is probably a good reference.

I agree with Lissa, I did the below in a week (starting in Belgium mind) and averaged some big miles (over 2000 in 6 days), a lot on twisties:
