Personally I would keep the OEM connector intact (fill the end with grease to preserve it), and piggyback connectors on any wires (properly, with solder and heatshrink).
That way you can just unplug the trick dash and bolt old back on it you want. Minimum hassle.

Got any pics of the bike?

I did exactly the same with my CBR wiring, used the old connector.

Speedo looks almost certainly a cable type, so you can get rid of the cable, leave the drive in the wheel (or replace it with some spacer if you're concerned about weight)

You'll then have to put a magnet on a wheel and line the sensor up with it (these almost always come in the kit)

The tacho should be easy enough, so should the rest of the idiot lights. The only one you may possibly have a problem with is the FI light, but since the rest of the dash is so simple I seriously doubt the FI system will care.

Coolant temp, maybe the stock sensor will work on your new dash, maybe you will have to fit another somewhere.

Like I said before, if you speak to the guys at Quadtech they will sort out a converter to actually make use of your old speedo cable (Thats if you want. Because often a lot of people that have used the Acewells, have often upgraded the magnet that gets supplied), it's what I did and was so much easier.
