I think the point is that a slipper clutch is only really useful when you are riding as if you were in a race, as in the situation Sid described.
If you ride like that on the road you're either incredibly good or you're an idiot.
If you're incredibly good, then you should have the experience to know that it's still stupid, if you're an idiot then you will learn that hard way.
And after that little bout of poorly explained logic we come to the conclusion that you don't need a slipper clutch on the road unless you're an idiot.
As for the problem with the back wheel getting slowed down when you change down and don't account for it? blip the throttle and don't be too eager with the down changes. We've all been there with the back wheel wanting to do it's own thing, you learn to stop it happening after a while.
My current regular cockup is using the rear brake too hard, btw.

Something we've all done and I still occasionally do. As Carsick says, get your technique right and it won't often happen.
