thank you messie. I just have food on the brain 24/7 so thought i'd start making a little cash from it. Going to start up as a sole trader and do it all properly. I was thinking of doing different skewered kebabs for the deli, west country with pork meatballs ans anise caremelised apples. An indian one with spiced lamb and mini pakoras and a mexican chilli one with marinated beef chunks, peppers and little kidney bean fritters made with whole kidney beansa and a refried bean batter. Need to try that out first but i think it will work really well. I judst can't stop thinking of things now and want to keep the recipe booklets purely seasonal. It's so exciting. I shall look forward to the thoughts of you and our fellow foodies x

it's The Hamptons Deli on the high street in chipping sodbury. The website is www.thehamptonsdeli.co.uk but it's not up and running just yet. It's lovely for lunch or coffee if you're nearby though x

Congrats on getting what you want GG. However, as a working man from Lancashire I need proper food, and it is not a chippy tea.

Now if you could see your way to rustling up a nice rare fillet steak, sauté potatoes, mushrooms, a bit of asparagus and broccoli I might then let you cook my tea.

You need to get yourself up to Wigan and make some pies.

you'd probably like what i cooked stretchie last week then. A big centre cut of fillet, seared for 30 seconds a side in a super hot pan then poached for 6 minutes in beef stock, finished for 30 seconds a side in the hot pan with mushrooms lightly cooked in butter, spooning the butter over the steak, then resting it for 5 minutes. Served with saute potatoes, glazed carrots and sat on top of creamed cabbage made by blanching shredded savoy cabbage and cooking it in a pan with cured crispy bacon lardons, a little mascarpone, parmesan and seasoning. Made a sauce from a little red wine in the pan juices, some of the poaching stock and reducing.

How does that sound? Oh, i love making pies. Did one with rabbit and plum in october and that was lush!
