slacken the oil drain and drain out slowly until you get to the right level and if you over drian just refill to correct level.

Couple of options, drain it out of the sump plug, but draining a small amount out of there is really hard, you will get a bath trying to put the plug back in! Just slackening the drain lets it drip out incredibly slowly. If you get a clean container you could drain it all then replace the right amount...
Other option is to unscrew the filter a bit and let some dribble out. Problem with that is the filter is after the pump, so you end up having a couple of seconds with no oil flow on first startup. What I do in this situation is crank it without sparkplugs and disconnect the coil LT wires, so it isn't subjected to running stress without a full flow of oil. Or you could find a way to siphon some out but I don't think you'd be able to get anything down the filler cap to the sump as the clutch and splash plates etc. is in the way.
