I use a crushed vitamin c tablet to help my stoneground bread rise, might be worth a shot?

Gluten free flour does not hold the carbon dioxide as well as wheat flour. It needs to be mixed for a very short a time and fairly gently to avoid knocking the carbon dioxide out of the mix because it's that which makes them rise.

I'll go to the shop I get my gluten free flour from as I've never had a problem using it. Actually......when I make American pancakes for bacon and maple syrup tretment, the pancakes actually seem lighter and fluffier when I use the Gluten free flour!
One thing to remember with cake/biscuit mixes and such like is that you should not over work it. Keep everything as cold as you can and work it only so that you combine the ingredients, no more than that. I might try making some next week and let you know if I discover anything useful! |

Doesn't baking powder make things rise? You could try adding in a little of that. I have no idea if it has gluten in it or not though..
