I had a high-level 2 into 1 M4 on the SV1000. Definately very not legal. Check your insurance before you go getting all illegal though. Policy will want to know you've changed it anyway and if it's not EU marked (M4 typically not as US made) they may well not cover you. Best to know where you stand up-front rather than once bike is in a ditch somewhere in a curiously uninsured kind of way.
Whether you chose to tell them or not or be illegal or not is down to you but don't be suprised if you have issues should you ever want to claim but are not in a position to quicly switch back to something standard.
As for MOTs, if they fail you JUST for that, suggest you go elsewhere.
