Default Replacing bolts

A fair few of the bolts on my traily bike have been mullered by cack hands using wrong tools in the past, so I want to replace them.
Mostly the common M6 made of cheese cross head ones.
However, after plenty of googling, the common advise is NOT to use stainless steel, as the tensile and shear properties are different, plus then can weld themselves into casings. Similar warnings against anodised alloy.

Any idea of the correct bolt type - I seem to be finding 8.8 or 12.9 being mentioned as tensile strength, and the correct material?

For most places stainless steel is fine, Aluminium alloy is best off only being used for low stress situations such as fairing panels.

Certain points like brake caliper mounting bolts, brake disc bolts etc should have you getting fussy about the grade of metal.

Engine case bolts are fine in stainless, use a dab of grease and they'll be reet.
