You can't just drill out and re-tap, helicoil or timesert a bleed nipple thread.

The taper at the bottom of the nipple hole MUST be at exactly the right angle to seal with the bottom of the nipple.

These are brakes - DON'T **** AROUND.

Replace the caliper. It's not like it's a super rare and expensive unobtanium bit of kit....

Yeah, I would jump at the £60 new calliper option.

Unlucky to strip that undoing it. Have you bled these brakes before?
