Duke 916 as a summer toy.I'd have to keep my real bike for if I needed to get anywhere though.
In the real world you can get a good late ZX9R for that which is cheap performance and a sensible every day bike.

Your SV would never get to the Maldives-----Too much water down the front plug hole.

You would need some of Northwind's silicone as well,and a jet ski conversion.I think Kawasaki do one for the SV.
