I use a stanley blade at a shallow angle, doesnt have to be perfect as thats the point of the gasket. However dont be taking chips out either.

i used the wedge end of a woodern close peg! worked well when sharpend regularly..and no risk of damge

Plastic plant labels work well on aluminium parts. On old steel engines I'd use the side of an old bevel edge chisel.
