Does this mean I'll get back what I paid for my SV three years ago then

I think not!

Bikes also have a minimum value they go to. A popular bike (SV, Bandit, fazer etc) in great nick won't go below a certain amount even if it's old so you can end up with a 5 year age difference but fairly similar prices within a few hundred pounds.

I agree, I would say it's between £800-1000. But I'm talking about newer bike values - the difference between a low milage 3 year old bike and a lowish milage 7 year old bike (i.e. buying a newer K3).

It may appear as if your bike is worth more secondhand but when you look at the purchase price of a replacement you are still in the same comparable values should you be upgrading or replacing with newer. The only way you may win is if you are selling and not replacing it with another bike.

It's strange that, isn't it - how they tend to a minimum price below which a 'serviceable' bike will never drop.

Same with cars, but it seems to fall lower for them. When I was growing up driving bangers, I always had this understanding that £350 got you a car with 6 months MOT which was generally very tired but unlikely to go bang in an expensive way.
