The frame acts totally differently with very similar suspension and brakes.

Aesthetically the curvy varity frame looks better as naked, pointy varity frame looks better as faired. ie faired curvys dont look very good and pointies dont look good naked IMO.
Mechanically I dont know enough to see past the aespthetics in that respect, but if I were to attempt a project I do know it would be based on the pointy frame

Like most have said Curvy frame GSXR suspension with correct ride height, 320mm disks with 4 pots, sort the swingarm out so its inkeeping with the frame and not an afterthought.

Full fairing and underseat exhaust and a 750.

Sort of a Ducati 748 but one that you can ride everyday.

That's about it . A reliable . With not too much bum in the air kill your wrists ridding position. Though I'd like 1/2 fairing and belly pan as an option

Get some proper chain adjuster things to get rid of the crap plates which inevitably scratch the swing arm.

I'd probably buy one if there was a 90hp with decent suspension and brakes.

Different is fine.

Why would you want a single sided swingarm? They are heavier, less rigid, more expensive to make. The only advantage is the ability to remove and replace the rear wheel quickly, and you can engineer a proper swing arm to achieve that if required.
