Easy are predominently a fly by wire airbus operator, they still have some 737-700 aircraft, the only time they have 757 machinery is on charter to cover shortages.

Yes, some companies specialise in having aircraft available for short term rental, by the flying hour complete with crew, they sit and wait for other operators to have problems and then operate for them at vast expense. For a longer term shortage an airline will rent just the aircraft and fly it themselves but this needs to be a type the airline is authorised to operate, so for Easy an Airbus 319 could be flown this way but a 757 would have to come with the crew.
