On the older sprint there are two screw inserts behind on the existing braket, would it not be possible to remove the existing foot rest and fabricate a small plate using all available fixings but lowering the footrest to where you want it to be.
Alternatively and better imo have a loose footrest just using a drop extension[a metal bar with holes at either end on the outside] fitted to the footrest fitting hole that is already there then when not in use you can swing it back up not impeding any clearance issues that may arise with a fixed system.
This would hang down with gravity but could be moved by the pillion for there own comfort once you have established the desired drop from the original fitting.Apart from actually mounting the pillion seat it is only some place to rest their feet and not a weight bearing item.

Dog leg the peg. Easiest and neatest soution imo and having a large flat plate could cause issues with snagging?

I have now decided to go for dogleg pegs rather than a polished ally plate.
It wont look so over powering either, i want to make it look almost factory if possible.
I could use the original pegs, but they are solid square blocks, i want something with a forked block so i can mill down flats either side of an ally bar of about 15mm in diameter and drill a hole for the peg to attach / rotate on.
I could then screw a plate onto the bottom of the bar so stop footpeg so thats it parrallel to road.

Hope this makes sense, it does to me

You could always just lop a few inches off the wife's legs, andstcik her feet back on with Araldite.

That way you get to keep the bike and the wife.

Might be worth looking to see if standard Kawasaki rear pegs fit the Sprint, and then buying some of these if they do
