Default Draining Coolant

I need to drain the coolant before I do my engine swap, but the Haynes doesn't seem to say how - it refers you to chapter 1 of the coolant section but that just warns about not opening the rad cap when the engine is hot.

So, where do you drain the coolant from, and how do you avoid it splashing all over your engine casing and peeling off the paint?

AFAIK there should be a bleed screw thing you take out and it should drain out.. failing that you could just take the hose out of the radiator and run the engine for a short while. Won't do it any harm.
