So what do I check? And how on the side of the road?

Note I've done 80+ miles since fitting grips

Nope I'm asking what you'd do.

routing of the throttle cables. Make sure they're not trapped or chaffed through causing them to snag. After 80 miles that's enough to wear through the outer cables. Edge of the road it's easy, you've already got the tank up.

Ok, what I'd do is undo what I did in the morning, in case over time something has moved. So I'd take those old man hand guards off to start with and see if I messed anything up there. Then I'd work my way back from the throttle, making sure the grip moves properly, checking the cable etc.

Good question ...
Throttle butterflies open and close when throttle opened and closed.

Not running long enough to know but it should at least tickover even if they don't move

unless they are in the fully closed position. They should always be 'open' to some degree. When you switch the ignition on they should fully open then return to the default angle.

They did the full range cycle then stopped just short of shut which is normal and should be enough for it to tickover,

In general butterflies and throttle action seem OK and in sync when viewed from above the airbox looking into the bodies.

I need to go do other stuff now so will answer further questions tomorrow.
