Seriously Matt, I think what your other half needs is a reality check. So for everything she insists is essential for the wedding, get her to ask herself if it really is? Who is she trying to impress? Why does she feel she needs candy floss, pop corn, an overpriced photo booth/cake/doves/Rolls Royce/diamond encrusted unicorn?
My friends got married in March, I didn't go on account of the fuss the bride was making about the whole deal so I decided I'd rather skip the whole lot of nonsense it was becoming. She's now on a massive downer as life is dull and boring now she doesn't have whatever her equivalent of popcorn was to fuss over. He is fed up with her moaning and she's put on a stone since the wedding. They are both starting to think perhaps they made a huge mistake! I found the jeans I got married in 12 years ago the other day at the back of the wardrobe. Tried the jeans on, they still fit, that made me happy, what more do you need?

I'm not anti weddings Matt, I know mine was an extreme case of not having a wedding but I always worry about woman who say their wedding is going to be the happiest day of their life and get really wrapped up in needing all this stuff to make it perfect. After all, if the first day of married life is the happiest, surely that means every day afterwards will be a disappointment.
Why not go to cash and carry and make up your own pick and mix instead? Buy all the favorites, some cellophane bags and people can take home what they don't eat for the next day to help get over their hangovers.
