Anyone any thoughts on what he adjusts/switches on the top of the engine when he finishes!!!!!

Saw a member of their police doing a similar thing when I went to the Craig Jones skills day on one of the Mets R1200RTs, which was pretty impressive. Takes a lot of practice though...
