But on top of the small errands, I do the odd couple-of-hours dart to friends at Uni, and the biggie is that I plan on going touring big time this summer, across Europe, and by the time I reach Dover I'd want to turn around if I were on the SV

For more BOOM, wait until your restriction is up.

Try something like a Bandit for size. A more upright position might be what you're after, yep its not a twin and it ain't clothed but in the right hands I've seen these bikes shift proper.

You can get them with a fairing.

1200 engine can be tuned to high heaven if you're so inclined too.

And the 1200's are fairly cheap on insurance for young folk as well about £430 TPFT for me at 18

That would fit the bill or a Fazer as they both have ample room for taller riders.
A 690 ktm may also be an idea at the seat heights are quite high.

Triumph Sprint ST 1050
I'm around 6'3 and find it very comfy.
And its fairly rapid too
