So you want a fried egg roll then?

Right.....here ya go, easier than sending it to all of you and you can just copy/paste into word on your 'puters!
1 small chicken, 1 onion, 1 stick Celery, 1 carrot.
1 inch ginger, thinly sliced
1 clove garlic, thinly sliced
1 pack udon noodles, straight to wok
2 spring onions, finely sliced
1 carrot, finely sliced
1 red chilli, de-seeded and finely sliced. Use a largeish (3 inch) chilli so not too hot
1tbsp Nam Pla ( Fish Sauce - or a pinch of salt)
2 star anise (or 1/2 tsp chinese five spice)


Boil the chicken, onion, celery and carrot for 2 hours. Strain and tear the meat off the chicken but keep the stock. Add the chicken to the strained stock with all other ingredients (minus noodles) and cook for 10-15 mins until the carrots have softened a little. Put required amount of noodles in a bowl and pour soup over them.

The ginger, garlic and carrots will retain a bit of bite, but this is what you need to get the full flavour and also, the full goodness.

If you want to make a creamy soup like I made at the AR...do this...


2 Chicken breasts, steamed and sliced lengthways
500g Udon Noodles
500ml Coconut cream
500ml Chicken stock
1 inch piece fresh ginger, sliced into thin discs
1 clove garlic, crushed
1 red Chilli, de-seeded and sliced into rings
1 Bok choi (or Pak choi) cut in half lengthways for the larger leaves
1 handful fresh coriander, chopped
¼ tsp Chinese 5 spice
1 tbsp Nam Pla (fish sauce)
A pinch of salt and pepper


Pour the coconut cream and chicken stock into a large saucepan, bring to the boil while watching and then turn down to simmer. Add the Nam Pla, Chinese 5 spice, Ginger and Garlic. Allow to simmer for 10 minutes.
Bring another large pan of water to the boil and add the Udon Noodles. Leave to boil until tender, but still with some texture. Remove and drain the noodles and add to the soup along with the sliced, steamed Chicken breasts, Bak Choi and Chilli. After 2 minutes add the chopped fresh Coriander, remove from heat and serve immediately.

Not completely. I love the ones with the summer fruits, strawberrys and that dort of thing. Do go and try the local ciders and perrys at the beer festival though. :) Off to Sainsburys tomorrow then!
