Never made souffle, might try that :)

Don't be afraid of making them. You do have to do a few things, like have the oven at the right temp, cook them for the right amount of time, butter and dust the ramekins and fold the egg whites in gently but they are actually really really easy. Let me know if you want a recipe. These are the rhubarb and custard ones I made yesterday...

Souffle is a leftovers dish...lol. It cracks me up how it is made out by chefs to be really difficult and they charge stupid money for them. It's a base and some egg whites......big deal.
The ones in the pic....if you have 150ml of leftover custard you can make these. Just get either individual ramekins or a big straight sided oven dish, butter it and dust with sugar or crushed biscuits. Put them in the fridge and put the oven on at gas 4/180c and put a baking tray in on the middle shelf (remove any upper shelves).
Put 100g sugar, 2tbsp water and 3 or 4 strips (chopped) of rhubarb into a pan and heat until the rhubarb softens but still hold some shape. Allow to cool and put a couple of pieces in the bottom of each ramekin. The rest should go into a bowl and be mixed with the custard and 1tbsp plain flour and 1 egg yolk.

Then whisk 4 egg whites to stiff peakes and fold into the mix. To make it easy, start with 1 spoon of egg whites and mix in thoroughly, then add half and fold in, then the rest and fold in. Fold gently, but don't be afraid of it. Spoon into ramekins, pop on the hot tray and bake for 18-20 mins for individual ramekins or 20-22 minutes for a larger dish. They should be nice and golden brown like in the pics.

Morning Lily, Reeder, Q, Rob, anyone else who's up.

Q - been up since half 7, not early. Funnily enough, only just sat dow at the laptop after being stuck in my bathroom. We have like a little balcony with double doors in there and being that end of the house, it's right next to the trees the birds love. Was stodd watching the robin (do it every morning) and the bluetits and black caps (i think) were lower down the tree. Then, they all stopped singing. Seconds later a sparrowhawk landed in the tree. The robin didn't fly away, but it managed to completely hide itself. Sparrowhawk was there, hopping between branches, looking for birds for going on 10 minutes. I didn't want to move and frighten it as I want to see it there again. It did eventually clock me, look right at me and fly off. Just went back to see if the birds are singing again and the squirrel was coming up the fence from the bottom of the garden eating the berries on the way.

I bleedin love it here. Need Maria to come stay :-)
